Mom's Split Pea Soup

2 cups dried split peas, cleaned and rinsed

8 cups vegetable stock

 

Combine these ingredients in a large soup pot and bring to a boil. Add the following:

 

2 chopped onions

4 medium chopped carrots

4-6 leafy celery tops

1 large bay leaf

2 tsp salt

pepper to taste

 

Cover and cook for 1 to 1-1/2 hours. Remove bay leaf. Place soup in blender or food processor and blend until smooth. Enjoy!
