Light Cheesecake Parfait

 

1/2 cup light ricotta cheese

1/2 nonfat or lowfat cream cheese

1/4 cup sugar

1/4 cup no sugar, all fruit spread, melted

1 cup fresh fruit

1/4 cup vanilla wafer or graham crack crumbs

Light whipped topping (optional)

 

Mix cheeses and sugar until smooth. Combine melted fruit spread and fresh fruit, stir gently. Divide half of the fruit mixture into 4 parfait glasses. Top with half of the cheese mixture. Top with cookie crumbs. Top with remaining cheese mixture. Top with remaining fruit mixture. If desire, top with a spoonful of whipped topping. Refrigerate for 2 hours before serving.

 

May use any fruit and fruit spread -- blueberries, strawberries, raspberries, etc.
